You bought the clean soup. The front of the can said no added MSG, and you had no reason to doubt it. An hour later came the headache, or that foggy wired feeling, and the thought that you did everything right.
You did. The label was accurate by the rules that govern it. Monosodium glutamate only has to appear by name in one narrow case, and outside that case it is free to sit in your food under words you would never connect to it.

Can a product say “No Added MSG” and still contain MSG?
Yes. FDA rules only require the additive to be named when it goes in pure and on its own. Arriving inside another ingredient does not trigger that requirement at all, and the list of carriers is long: hydrolyzed vegetable protein, autolyzed yeast, yeast extract, sodium caseinate, calcium caseinate. Each one is made by deliberately breaking protein apart, which is exactly what turns bound glutamate into the free form your body reacts to. All of them can deliver free glutamate to your plate with nothing on the front of the box to warn you. On imported labels, look for the additive code E621. None of this makes glutamate a poison. It makes the label something you cannot fully trust, which is a fixable problem.
What Is MSG, and Why Does Your Body Already Run on It?

So what is MSG, once the noise around it clears? At its heart sits glutamate, and glutamate is no intruder in your body. It works as a signaling molecule and serves as the main excitatory messenger in your brain. Your nervous system depends on a steady supply.
You eat it constantly without noticing. Tomatoes carry it. So does Parmesan, and so do mushrooms. Even breast milk delivers it to newborns. A typical adult takes in around thirteen grams a day from ordinary protein in food, against roughly half a gram from anything with the additive stirred in.
That gap changes the question. Whether glutamate belongs in your diet was never really the issue, because it has been there your whole life. What matters is how it arrives.

Nothing about that is fraudulent. It is accurate, technically, and close to useless if your body reacts. The rule describes what a manufacturer adds. You are trying to learn what you are about to swallow. Those two things stopped matching a long time ago.
Which Other Names Like Yeast Extract Are Worth Learning?
A short list does most of the work here. Scan an ingredient panel for hydrolyzed vegetable protein, autolyzed yeast, yeast extract, sodium caseinate, and calcium caseinate. On imported packaging, watch for the additive code E621, which is monosodium glutamate wearing a number instead of a name.
When any of those appear, your body handles that food as a source of free glutamate, whatever the front of the box says about it.
There is a second reason yeast extract deserves your attention. Five everyday foods cause the most trouble for women in midlife: dairy, gluten, yeast, sugar, and alcohol. Yeast sits on that list. Yeast extract sits on ingredient panels. If yeast already gives you grief, a product carrying it hands you two problems in one spoonful, and neither one is announced anywhere you would think to look.
Those five foods tend to show themselves slowly as digestion loses speed with age. Fatigue with no obvious cause. Bloating after meals that used to sit fine. Mood that shifts without warning, sleep that breaks apart, weight that will not move.

The temporary effects that do appear, flushing, headache, a numb feeling around the face, tend to show up at doses around three grams or more taken with no food at all. That describes a bouillon cube dissolved in hot water, not a seasoned dinner.
The frightening claims usually trace back to animal work using quantities no person would ever eat. Those results do not describe your dinner, and stretching them to fit it would be dishonest.
Something else deserves saying about the research. A high dose of this compound in plain water tastes genuinely unpleasant. People in a study can often tell they did not receive the placebo, and once that happens the findings stop meaning much. When a headline sounds alarming, it is fair to ask whether the people being tested could taste which group they were in. Often they could.
And here is what the reassuring summary leaves out. If a normal amount, eaten inside a full meal, still leaves you foggy and off for the rest of the evening, that experience counts as information. It sits outside what the averages predict, and it is still yours. Averages describe a population. You are one person, sitting with the result.
What Does It Mean to Become Your Own Primary Care Person at the Label?
Nobody is going to hand you a complete list of every place free glutamate turns up in a grocery store. The rules were written without sensitive people in mind, and they are not going to change because one afternoon went badly for you.
So the work comes back to you, which is less discouraging than it sounds. Two habits carry most of the weight.
Stop taking it concentrated on an empty stomach. Bouillon, broth, a seasoning packet stirred into hot water partway through a fast. Those are the setups that spike you hardest, and they are simple to sidestep once you recognize them.
Pair anything that might carry a dose with a real meal. Protein, fat, and carbohydrates alongside it will flatten the climb before it starts.
Then turn the package over. It costs you a few seconds, and you were going to be reading labels anyway.

What you need is a working knowledge of the concentrated, hidden, fast-moving version, and the confidence to trust your own reaction when it arrives.
