Itās been almost 3 decades (YES ⦠30 years) since I was introduced to the concept of food sensitivities.
I knew people who were allergic to certain foods.Ā š± It was life-threatening if they accidentally consumed the toxic substance.
Food sensitivities are different ⦠and much harder to manage. They create symptoms but it isnāt easy to connect the dots.
I was told many years ago that I should avoid wheat, dairy and alcohol.Ā š·Ā The doctorĀ š©š»āāļøĀ (an MD) conducting the evaluation admitted that most people should avoid those substances.
For the most part, I have continued to consume these things in moderation. And, when Iām doing a deep internal cleaning, I avoid them altogether.
The doctor suggested that I switch to rice.Ā šĀ And, thatās been my alternative to pasta ever since.
Until ā¦
A few years ago, I decided to have a food sensitivities blood test. If Iām considering using a specific test with patients, I will use myself as a guinea pig.
The test results were surprising.
Itās common to use almond milk as a dairy alternative. And, as I mentioned,Ā rice is a commonĀ substituteĀ for wheat-basedĀ side dishes like pasta.Ā š
This is one of the reasons why I caution you to be careful with substitutions.
To give you an idea of what to expect with food sensitivities ā¦
I was traveling last week ⦠and notĀ carefulĀ with my food choices. On the last day,Ā I consumed a substantial serving of rice.Ā š
TheĀ next day, my joints were so achy I had trouble walking around. One of my finger joints is the first to show the signs of inflammation. It ācatchesā when I try to extend my finger.Ā š
A few days of careful choices and the symptoms will retreat but I learned a lesson.
I need to make better choices so that I donāt put my body under additional stress. Travel is stressful enough!
