It’s been almost 3 decades (YES … 30 years) since I was introduced to the concept of food sensitivities.
I knew people who were allergic to certain foods. 🍱 It was life-threatening if they accidentally consumed the toxic substance.
Food sensitivities are different … and much harder to manage. They create symptoms but it isn’t easy to connect the dots.
I was told many years ago that I should avoid wheat, dairy and alcohol. 🍷 The doctor 👩🏻⚕️ (an MD) conducting the evaluation admitted that most people should avoid those substances.
For the most part, I have continued to consume these things in moderation. And, when I’m doing a deep internal cleaning, I avoid them altogether.
The doctor suggested that I switch to rice. 🍚 And, that’s been my alternative to pasta ever since.
Until …
A few years ago, I decided to have a food sensitivities blood test. If I’m considering using a specific test with patients, I will use myself as a guinea pig.
The test results were surprising.
It’s common to use almond milk as a dairy alternative. And, as I mentioned, rice is a common substitute for wheat-based side dishes like pasta. 🍝
This is one of the reasons why I caution you to be careful with substitutions.
To give you an idea of what to expect with food sensitivities …
I was traveling last week … and not careful with my food choices. On the last day, I consumed a substantial serving of rice. 🍚
The next day, my joints were so achy I had trouble walking around. One of my finger joints is the first to show the signs of inflammation. It “catches” when I try to extend my finger. 👈
A few days of careful choices and the symptoms will retreat but I learned a lesson.
I need to make better choices so that I don’t put my body under additional stress. Travel is stressful enough!
