Itβs been almost 3 decades (YES β¦ 30 years) since I was introduced to the concept of food sensitivities.
I knew people who were allergic to certain foods.Β π± It was life-threatening if they accidentally consumed the toxic substance.
Food sensitivities are different β¦ and much harder to manage. They create symptoms but it isnβt easy to connect the dots.
I was told many years ago that I should avoid wheat, dairy and alcohol.Β π·Β The doctorΒ π©π»ββοΈΒ (an MD) conducting the evaluation admitted that most people should avoid those substances.
For the most part, I have continued to consume these things in moderation. And, when Iβm doing a deep internal cleaning, I avoid them altogether.
The doctor suggested that I switch to rice.Β πΒ And, thatβs been my alternative to pasta ever since.

A few years ago, I decided to have a food sensitivities blood test. If Iβm considering using a specific test with patients, I will use myself as a guinea pig.
The test results were surprising.
Itβs common to use almond milk as a dairy alternative. And, as I mentioned,Β rice is a commonΒ substituteΒ for wheat-basedΒ side dishes like pasta.Β π
This is one of the reasons why I caution you to be careful with substitutions.
To give you an idea of what to expect with food sensitivities β¦
I was traveling last week β¦ and notΒ carefulΒ with my food choices. On the last day,Β I consumed a substantial serving of rice.Β π
TheΒ next day, my joints were so achy I had trouble walking around. One of my finger joints is the first to show the signs of inflammation. It βcatchesβ when I try to extend my finger.Β π
A few days of careful choices and the symptoms will retreat but I learned a lesson.
I need to make better choices so that I donβt put my body under additional stress. Travel is stressful enough!
